Chili Stir-Fry with Pork-and-Vegetables

Chili Pork Stir Fry Recipe With Vegetables
Ingredients:

2 – 3 Hot red chillies (de-seeded) chopped
3 tbsp light or dark soy sauce
¼ rind of peeled orange (cut into very thin strips)
1in/2.5 cm piece of ginger (peeled and finely chopped)
1lb/450g thickly sliced tenderloin pork (cut into bite-size chunks)
2 tsp cornflour
1 red or green pepper (optional) Chopped into small chunks
¼ pint/150ml orange juice
4 tbsp olive oil
6oz/175g green beans (fine)
6oz/175g baby sweet corn (halved lengthways)
2 – 3 tsp brown sugar
2-3 tbsp cider vinegar
Salt and ground black peppercorns to taste

Method:

Put the pork into a bowl. Mix the corn flour, soy sauce, ginger and orange juice and
pour onto the pork.

Heat up the oil in a wok or pan, to just before smoking and add the pork using a
slotted spoon. Stir-fry for about 5-6 minutes until browned all over. Set the marinade
aside for later. Remove pork chunks to a bowl and keep warm.

Put the green beans, chillies, red or green pepper (optional), and sweet corn into the
wok and stir-fry for 2-3 minutes, then add the remainder of the marinade, vinegar,
sugar, orange rind and seasoning to the wok and bring to the boil. Simmer for about 5
minutes. Now add the pork and continue to simmer for about 5 minutes or until pork
is cooked. Serve hot.
