Spicy Chicken Fried Rice Recipe
Spicy Chicken Fried Rice is a very simple and quick dish that not only tastes great and leaves you wanting more but is also a very economical meal as well. This kind of chicken fried rice recipe is ideal for students or anyone on a low budget.
Spicy Chicken Fried Rice Recipe
Ingredients:
2 Hot red chillies (de-seeded)
12oz/350g shredded chicken
A bunch of spring onions
4oz/100g frozen peas
1 carrot, cut into matchsticks
3 tbsp olive oil
2 oz/50g cashew nuts
2 tbsp dark soy sauce
2 tbsp sweet chilli sauce (optional)
1lb/450g cooked rice
Method:
Heat the oil in a wok or pan until neatly smoking and then add and stir-fry the cashew
nuts for 1 minute. Remove with a slotted spoon to a plate.
Rinse and slice diagonally the spring onions, then chop up the chilli.
Stir-fry the chillies and onions for 1 minute in wok and then add the chicken, peas and
carrots and continue to stir-fry for a further 3-4 minutes.
Now add all the remaining ingredients (including rice) and stir-fry for another 3-4
minutes until cooked thoroughly and serve.
Serves 4
